When it comes to BBQ, everyone wants to be able to make great ribs. The kind that get talked about for days. Now you can, and here's how. I have a Weber propane gas grill but couldnt get ribs the way I wanted. Guess what, you cant.

Then I read the book Low and Slow by BBQ Champion and coach, Gary Wiviott. He strongly recommends the Weber smokey mountain, 18.5 inch. if you read his book and follow his instructions, you'll make ribs better than any resteraunt in town. no joke.

The secret is the wood, natural charcoal, water pan, and time. Use a good wood (I use pecan b/c I have plenty of it, and it's a medium taste). Royal Oak makes a great natural charcoal and Wally World carries it. And Targit sells pork ribs already trimmed (st louis cut) for a lb. You can spend more for baby backs, but this grill makes everything sooooo tender than you'll probably enjoy the meatier ribs better. His rudimentary rub for ribs is great, and easy to prepare. Put a light coat of your favorite sauce at the end and you're done. But the book will go over this in detail. You are the student, he is the master!

Back to the grill. This grill hold the heat wonderfully, 250 degrees for 4-5 hours. perfect. Again, put weber's instruction book on the shelf and strictly work off of Gary's book, it's that good. The grill is very good construction, not some 0 bullet can smoker. You can do serious smoking with this baby. It has 2 levels so unless you're cooking for a boy scout den, you dont need the 22 inch size. Make sure you buy the charcoal chimney starter, it's a must.

If your serious about learning how to make kick-azz bbq, this is the grill for you. But without Wiviott's book, you'll never get the perfomance you want out of it. Why buy a Porsche and never take it out on the highway?
